- 0/8 Seafood Grill and its spirited lounge, Twisted Cork Wine Bar, are located in the Hyatt Regency Bellevue at 900 Bellevue Way NE. Co-Owner and Chef Dan Thiessen’s breakfast, brunch, lunch and dinner menus feature local Northwest products and flavors in unique, Asian-accented, seafood-focused dishes. The lounge offers over 85 wines by-the-glass; as well as a 350-label wine list. In 2008, 0/8 Seafood Grill won the honor of “Most Innovative Wine List†from the Washington Wine Commission in addition to Wine Spectator’s “Award of Excellence.â€
