Founded on the home-style cooking and family recipes of Ana Maria Montoya Kishihara, Inka's signature flavors come from the northern province of Peru, where Ana and her family are from. The family brought their exotic recipes to California in the early 1980s and eventually started Inka Grill with perfect rotisserie chicken cooked over a smoldering wood fire as king. Evidently, they are doing something right as their juicy, crispy birds helped with them the 2010 OC Weekly Best of Orange County Best Self-Basting Birds Award. In addition to whole rotisserie chickens, this joint also serves up a variety of sandwiches, salads and sides, all with a Peruvian kick.
